Caf&eacute; de Paris, a legendary destination for the whole of Monaco, has now the perfect combination of a Belle &Eacute;poque brasserie and a modern caf&eacute;. You'll want to come back for the famous Cr&ecirc;pe Suzette.

There are many "Caf&eacute;s de Paris" on the Old Continent and across the ocean, but only one place has remained carved on the golden marble of history. This is the Caf&eacute; de Paris in Monte Carlo, whose history began in 1868 when Fran&ccedil;ois Blanc, nicknamed "the magician", and Prince Charles III conceived three buildings that have become the legend of the place: the H&ocirc;tel de Paris, the Casino and the Caf&eacute; de Paris. These three architectural masterpieces face each other, and in the center opens up the legendary Casino Square, transformed by landscape architect Michel Desvignes, with Anish Kapoor's mirror at the center of the esplanade. Contrasts play here: from classicism, quite modern for its time, to the ultra-modern evolution of the surrounding buildings, which combine all the best qualities.
Caf&eacute; de Paris has a fascinating gastronomic history, including the creation of the famous Cr&ecirc;pe Suzette. In 1896, the Prince of Wales, the future King Edward VII of England, a regular at the caf&eacute;, came for lunch. Chef Carpentier prepared cr&ecirc;pes flamb&eacute;ed with liquor. When the pan accidentally caught fire, the Prince, mesmerized by the sight, asked the Chef the name of this amazing creation. Thus was born the dish Cr&ecirc;pe Suzette. In a sense, the name given to this dessert reflects the code of gallantry of the time - it is dedicated to the lady who shared the Prince's meal, a certain Suzette. Subsequently, the dish became a symbol of French gastronomy.

Victor Marion, the Executive Chef, who started his career at Le Meurice in Paris and Le Negresco in Nice, is in charge of the kitchen: "For 150 years, Caf&eacute; de Paris Monte-Carlo has been a Parisian brasserie located on Mediterranean soil. We have worked passionately to preserve the gastronomic heritage of this place, reinterpreting its iconic dishes with our own expertise." Dishes intelligently balance sophistication, simplicity and modernity: melting leeks with gribiche sauce, simple and comforting; eggs in mayonnaise subbed with caviar. Delicious scallops served here in a crispy, flavorful viennoise. Seafood lovers should try the "Perles de Monaco" oysters from Brittany and Normandy, which are aged for a month in Monaco's waters and have a nutty flavor. Chic! As for dessert, after the famous Cr&ecirc;pe Suzette, why not treat yourself to a majestic Norwegian omelette cooked in flamb&eacute; before your eyes?
As for the d&eacute;cor, designer David Collins from London has emphasized Art Nouveau codes, being inspired by the colors of ceramics of the time, and reproduced the signs of the zodiac. Stained-glass windows circled in matte gold to match the impressive Art Deco lighting harmonize with seats and benches upholstered in red leather. Caf&eacute; de Paris is a celebration of Monegasque history, gastronomy and sophistication, and it has clearly succeeded in conveying history and a taste for detail.
