The recipes uniquely blend Japanese and Mediterranean cuisines, inspired by the dietary habits of the world's longest-living communities. The Food & Beverage team has worked symbiotically with SHA’s expert nutritionists to conceptualize a variety of recipes that support common health conditions and goals, including detox, weight loss, fitness, and even satisfying fast-food cravings. Each dish is meticulously crafted to be energy-boosting, highly balanced, and made with local, organic, and seasonal produce.

From appetizers and starters to main courses, teas, and desserts, "The Power of Healthy Nutrition" offers access to SHA’s 360-degree method, known for its therapeutic effects. SHA Wellness Clinic is delighted to share three refreshing and healthy recipes from their cookbook, perfect for the season.

Cold melon soup with vegetable tartare

25-35 min, 2 people, ideal for weight loss and reducing fluid retention.

Ingredients

1 cantaloupe melon
50 g of courgette
1⁄2 carrot
3 tbsp. organic sweetcorn
100 ml of extra virgin olive oil
10 g of chives
1 tbsp. of organic apple cider vinegar
1 lime
1⁄2 Golden apple
3 or 4 mint leaves
Sea salt to taste
Edible flowers to decorate

Preparation

1. Peel the melon and remove the seeds. Put 1⁄2 cup of melon aside for the tartare.
2. Blend the rest of the melon with the apple cider vinegar and 80 ml of olive oil. Add salt to taste and refrigerate for a minimum of 1 hour.
3. Wash the rest of the fruit and vegetables (apple, carrot and courgette).
4. Cut the fruit and vegetables into small cubes and add them to a bowl along with the sweetcorn. Season with the rest of the olive oil, the chopped mint, zest of the lime peel and a pinch of salt.
5. Chop the chives (keeping 5 % aside for decoration). Add the rest to the mixture of fruit and vegetables.
6. Squeeze the juice from the lime and add it to the vegetable tartare. Adjust the flavour if necessary and refrigerate for a minimum of 30 minutes.

Plating up

1. Pour the the cold melon soup into a deep bowl or dish.
2. Add the tartare en quenelle (in an oval shape) using 2 spoons to shape it, or arrange it around the dish, as preferred.
3. Finish serving, decorating with the chives and a few drops of olive oil.

Grilled scallops with mango and white garlic vinaigrette

20 mins, 2 people

Ingredients for the white garlic with pine nuts:

120 g of white almond puree
250 g of water
7 ml of sherry vinegar
20 g of extra virgin olive oil
1 garlic clove
10 g of salt

Ingredients for the mango vinaigrette:

1 courgette
1 carrot
1 daikon
200 g of mango puree
20 ml of extra virgin olive oil
200 ml of umeboshi vinegar

Ingredients for the grilled scallops

6 scallops (without the shell)
Extra virgin olive oil Salt

Preparation of the white garlic with pine nuts

1. Blend all the ingredients together and strain through a fine sieve.
2. Leave to stand in the refrigerator.

Preparation of the mango vinaigrette and scallops

1. Cut the vegetables in brunoise.
2. Mix the brunoise with the mango puree, oil and vinegar
3. Season the flesh of the scallops and sear them well in a frying pan.

Plating up

1. Fill the base of the dish with the white garlic.
2. Plate up 3 scallops per dish.
3. With a spoon, spread the mango vinaigrette over the scallops.
4. Decorate with shoots and flowers.

Summer vibes smoothie

2 people 10 mins, 2 people, ideal for activation of the natural production of melanin to help tan the skin, has antioxidant and diuretic effect.

Ingredients

250 ml of organic apple juice
3 carrots
1⁄2 Granny Smith apple 1⁄2 pear
One small piece of ginger 5 or 6 mint leaves

Preparation

1. Wash all of the fruits, vegetables and sprouts very well.
2. Peel the apple and the pear. Cut into medium or small pieces, just like the carrot.
3. Grate the ginger. Once grated, squeeze it by hand into the glass to extract all the juice.
4. Combine all the ingredients in a hand blender glass and blend until you get an even texture, free of any chunks or lumps.
5. If you want to, you can strain it.
